Fresh Spring Rolls
I loved these in Vietnam. They make a great starter to any meal, especially in summer. Or a great start to building a meal for a family with different dietary requirements, because they are a delicious vegan and vegetarian option.

Mun Bean Sprouts
Finely sliced capsicum
1. Chop and prepare the fresh vegetables.
2. Melt rice paper by dipping in hot water for 10-30 seconds (refer to packet instructions)
3. Place the vegetables a third the way down the rice paper with the noodles on top of the vegetables
4. Roll up
2 Tbsp Hoi Sin
2 Tbsp Sweet Chilli Sauce
2 Tbsp Olive Oil
1-2 tsp peanut butter
This is best done by heating the oil and then adding the chilli sauce and Hoi Sin, mixing continuously. While the sauce is still hot add 1-2 tsp of peanut butter to taste.
