Scotch and Salad

I love this dinner, because there is so much colour even in the middle of winter. Takes 15 minutes, serves 4. Perhaps also roast some potato wedges for serving.

Ingredients

1 Cut your Own Scotch
Salad
1/8 of a finely shredded cabbage
1 grated carrot
1 grated courgette
1/1 inch of finely diced raw ginger
1 mango
¼ cup toasted of sunflower seeds
A sprinkling of sesame seed

Citrus Dressing

Juice and zest from 1 orange
1 tsp sweet chilli sauce
1 tsp fish sauce
2 Tbsp canola oil

Method

1. Cut your Scotch across ways into four steaks (see this week’s video)
2. Oil and salt your steak and fry each side for 2 minutes (for a rare steak), put steak into a preheated 150C oven, roast for 5 mins (for a medium rare steak)
3. Meanwhile toss salad ingredients together and whisk dressing ingredient together
4. Further top your salad with natural yoghurt (if you like)
5. You could also make a mushroom sauce, and, wedges and serve like below
