Zucchini and Feta Fritters

Ingredients

6 zucchini, grated

2 spring onions, thinly sliced

1/2 cup fresh parsley, finely chopped

200g feta, crumbled

1/2 cup flour

3 eggs, whisked

60ml olive oil

Salt

Pepper

Method

Squeeze the excess liquid from the zucchini then place into a large mixing bowl.

Add the spring onion, parsley, feta, flour and egg to the zucchini. Seasona with salt and pepper and mix to combine.

Heat the olive oil in a large frying pan over medium heat. Add 2-3 tablespoon fulls to the pan, depending on how large you would like the fritters to be, and cook for 2-3 minutes on each side. Repeat with the remainder of the mixture.

Serve the fritters with a side of greek yoghurt and extra spring onion on the side.
