
Tomato, Radish and Mozzarella Salad
Ingredients
250g baby tomatoes, cut in half
3 radishes, thinly sliced
200g mozzarella balls, torn
150g rocket
1/2 red onion, thinly sliced
2 tablespoons chia seeds
Good quality olive oil
Method
Place the tomatoes, rocket, radishes, red onion and mozzarella balls in a bowl and toss to combine. Transfer to a serving bowl.
Sprinkle the chia seeds over the salad and drizzle with good quality olive oil before serving.
