Stir fried Broccolini


1 tbsp olive oil

2 broccolini bunches

4 tbsp sweet chilli sauce

1/2 cup water

50g cashew nuts, chopped and toasted

Black pepper


Heat the oil in a large frying pan over high heat. Add the broccolini and cook, stirring occasionally, for 4 minutes.

In a small bowl, mix the sweet chilli sauce and water until combined. Add half of the chilli mixture to the frying pan and cook, stirring constantly, for 1 minute.

Transfer the broccolini to a serving platter and top with the cashew and remaining chilli mixture. Season to taste with black pepper.
