
Quick and Easy Spaghetti Bolognaise
Ingredients
500g Beef Mince
250g White Button Mushrooms
200g Baby Spinach
2 Garlic clove
2 Onion White
2 Tinned Toms
50g tomato paste
500g Pasta – Spaghetti
Method
Prepare your vegetables. Coarsely grate the mushrooms. Finely grate the garlic and onion. Finely chop the spinach.
Place a large shallow pan on medium-high heat. Put 1 tablespoon of olive oil into the pan, with the beef mince breaking everything down with a wooden spoon. Cook for 5 minutes, stirring regularly.
Place all the prepared vegetables into the pan and stir through. Reduce the heat and cook for 10 – 15 minutes until the vegetables are soft.
Add the tinned tomatoes. Half fill a tin with water and pour into pan. Stir through the tomato paste. Reduce to low and leave to cook until thick and glossy and reduced. Cook for as long as you prefer to further intensify the flavours.
About 20 minutes before you are ready to serve bring a saucepan of salted water to a boil for the spaghetti. Cook the pasta according to the packet instructions, drain and save some of the starchy cooking water. Add the pasta to the sauce, stir in the reserved pasta water and mix well.
Garnish with your choice of fresh herbs, and serve with your favourite grated cheese.
