Smashed Avocado on Toast


4 eggs

4 slices of bread, whatever you prefer

1 avocado

50g feta

Salt and pepper

Lime, cut into wedges


Place the eggs in a saucepan of boiling water and cook for 5-7 minutes.

Drain and refresh under cold water for 5 minutes.

Peel, slice in half and set aside.

Mash the avocado in a bowl, crumble over the feta and mix well.

Place the toast on plates and top each slice with the avocado mixture and egg.

Sprinkle with salt and pepper and serve with lime wedges.
