Pumpkin and Kale Pasta
3 garlic cloves, crushed
200g baby kale
In a bowl, toss the pumpkin, garlic, salt, pepper and oil to coat.
Place on a large oven tray and cook for 20 minutes.
Cook the pasta in a large saucepan of salted boiling water according to packet instructions. Remove from the heat. Drain, reserving 1 cup of the cooking liquid.
Return the pasta and cooking liquid to the pan. Add the pesto, pumpkin, kale, salt and pepper. Toss to combine.
Divide between bowls to serve.
