Oven Roasted Garlic Mushrooms


250g white button mushrooms

1 1/2 tbsp lemon juice

2 garlic cloves, finely minced

1 tbsp extra-virgin olive oil

50g unsalted butter, melted

1/2 tsp each of salt and pepper

1 tsp fresh thyme leaves, parsley, or oregano


Preheat oven to 220°C.

Toss mushrooms with butter, oil, garlic, salt and pepper in a large bowl using a spatula to combine well.

Spread mushrooms onto a baking tray and roast for 25 minutes, make sure not to toss or turn.

Remove from oven.

Push mushrooms together onto one side of the tray, drizzle with lemon, sprinkle with thyme, parsley or leaves and toss.

Serve immediately!
