Mexican Sweetcorn Salad


4 sweetcorn, husks off

11/2 tbs mayonnaise

1 lime juice and its zest

1 shallot thinly diced

1 garlic minced

1/4 cup of feta cheese crumbled

1/4 cup of chopped coriander

1/4 tsp smoked paprika

1 jalapeno to spice it up

salt to taste


Preheat the BBQ. brush corn with olive oil and add to the grill to cook, turning often, until charred all over, about 10 minutes.

While the corn is grilling mix together the mayonnaise, lime juice, zest and garlic in a small bowl.

When the corn is ready remove it from the BBQ and allow them to cool enough to be able to cut the corn kernels off the cob into a separate larger bowl. Add the shallots, feta cheese, coriander, smoked paprika and jalapeno.

Stir the mayonnaise mixture into the salad mixture and it’s ready to serve.

Serves 2-4 as a side dish
