Grilled Zucchini with Basil Pesto

Ingredients

600g zucchini, sliced into 3cm rounds

Olive oil

Salt

Basil pesto recipe

Method

Salt the zucchini pieces on both sides and set aside for 10 minutes.

Make the pesto using our basil pesto recipe.

Turn up the BBQ to high heat or alternatively use a griddle pan over high heat.

Remove the excess salt from the zucchini pieces, drizzle with olive oil and place on the BBQ for 2-3 minutes on each side.

Place the zucchini pieces on a serving platter and dot with basil pesto before serving.
