Fried Rice

Ingredients

1 tablespoon sesame oil

2 eggs, lightly beaten

1 cup broccoli, finely chopped

3 spring onions, finely chopped

1 tablespoon ginger, finely grated

2 garlic cloves, crushed

1 cup fresh peas

4 cups white rice, cooked

2 tablespoons soy sauce

Method

Heat half the sesame oil in a large frying pan over high heat. Add the egg and swirl the pan so the egg coats the whole base of the pan. Cook for 1-2 minutes then remove from the pan to slightly cool. Once cooled, gently roll the egg up and evenly slice then cover to keep warm.

Place the remaining sesame oil in the same pan over medium heat. Add the broccoli, spring onion, garlic and ginger and cook, stirring, for 2-3 minutes until the broccoli is bright green.

Add the rice, peas and soy sauce to the pan and cook, stirring, for a further 3–4 minutes or until the rice is steaming hot.

To serve, top with the sliced egg and some extra soy or chilli sauce.

This is a great base for fried rice. Add your choice of chicken, prawns, tofu or extra vegetables to bulk it out.
