
Fish, Cucumber and Spinach Burger
Ingredients
4 burger buns
4 firm white fish fillets
2 tablespoons olive oil
100g spinach
1 red onion, thinly sliced
1 cucumber, thinly sliced
1 bunch fresh dill
Tartare sauce
Salt
Pepper
Method
Preheat the oven to 150C.
Cut the burger buns in half, place on a baking tray lined with baking paper and toast for 5-7 minutes until starting to brown.
Heat the olive oil in a large frying pan over medium heat. Season the fish fillets with salt and pepper, add to the pan and cook on each side for 2-3 minutes before removing from the pan.
Spread the tartare sauce on the base side of the bun and top with spinach, fish fillet, cucumber, red onion and fresh dill.
