Chicken Fajitas


1/2 cup olive oil

1/4 cup lime juice

2 tsp cumin

1/2 tsp chilli flakes

500g chicken breast

Salt and pepper

2 capsicums, thinly sliced

1 onion, thinly sliced

Farrah’s 6 inch Tortillas

1 avocado

Sour cream


Whisk oil, lime juice, cumin, and chilli flakes together in a large bowl. Season chicken with salt and pepper, add to the bowl and toss to coat. Marinate in the fridge for 30 minutes.

When ready to cook, heat a tablespoon of oil in a frying pan over medium heat. Add chicken and cook until golden and cooked through. Rest for 10 minutes, then slice into strips.

Add capsicums and onion to the frying pan and cook until soft. Add the chicken back into the frying pan and toss until combined. Serve with tortillas, avocado and sour cream.

A wonderfully versatile dish, switch out the meat to whatever you’d prefer.
