Cheat’s Crumbed Fish

Ingredients

300g white fish

100g stale bread

Zest of 1 lemon

1 rasher of bacon

1 egg

50g plain flour

1 tbsp olive oil

Method

Preheat the oven to 220°C. Line up on a non-stick baking tray ready for the fish to bake on.

Roughly chop the bacon, place in a food processor, tear in the bread, add oil, lemon rind, and blitz into fine crumbs, and spread on a plate. Spread the flour across a second plate. Beat the egg on another.

One by one, turn the fish in the flour, then the egg, letting any excess drip off, and finally turn in the bacon crumb.

Place the fish onto the lined baking tray and roast between 10 – 15 minutes until golden.

You can swap out the bacon in the crumb with anchovy, or a herb of your choice.
