Cauliflower Mac and Cheese


250g macaronio

1 cauliflower, cut into florets

300ml milk

250ml cream

220g cheddar cheese, grated

150g parmesan, grated

1 garlic clove, crushed

50g unsalted butter, melted

200g sourdough breadcrumbs

2 tbsp rosemary leaves


Preheat oven to 200C.

Cook the pasta in a large saucepan of salted boiling water for 8 minutes.

Add the cauliflower and cook for a further 2 minutes.

Drain and return to the saucepan with the milk, cream, cheddar, parmesan, salt and pepper. Reduce the heat to low and cook, stirring.

Place the macaroni mixture into a large ovenproof dish. Mix in the breadcrumbs, garlic, rosemary and butter.

Bake for 20 minutes.
