Cauliflower Gratin


1 large cauliflower, cut into florets

200g cheddar cheese, grated

250ml cream

1 tbsp dijon mustard

Salt and pepper


Preheat oven to 220C.

Add the Dijon mustard to the cream and stir to combine.

Place the cauliflower, half the cheddar, cream mixture, salt and pepper in a large bowl and stir to combine.

Place the cauliflower mixture into a large ovenproof dish and sprinkle over the remaining cheddar.

Cover with non-stick baking paper and aluminium foil, place on a large oven tray and cook for 20 minutes.

Carefully remove baking paper and foil and cook for a further 10 minutes.
