
Brussels Sprout and Zucchini Fritters
Ingredients
3 zucchini, shredded
6 brussels sprouts, shredded
200g halloumi, grated
2 spring onions, finely chopped
1 cup basil, shredded
2 garlic cloves, crushed
1/2 cup flour
3 eggs
Olive oil
Salt and pepper
Greek yoghurt, to serve
Method
Place the zucchini, brussels sprouts, halloumi, spring onion, basil, garlic, flour, and eggs into a large bowl. Sprinkle with salt and pepper and mix well to combine.
Heat the olive oil in a frying pan over low-medium heat.
Place 1 cup of the fritter mixture into the pan and spread evenly over the base. Cook for 3-4 minutes, flip and cook for a further 3-4 minutes then remove form the pan. Repeat this step with the rest of the mixture.
Divide the zucchini fritters between plates and top with the greek yoghurt to serve.
