
Broccolini and Steak Salad
Ingredients
360g sirloin steak
1 bag of broccolini, trimmed
1 cup cabbage, shredded
1 shallot, sliced
1⁄2 cup mung beans
1 green chilli, sliced
Kecap manis, to serve
Mint, to serve
1⁄4 cup chopped peanuts, to serve
Peanut satay sauce
1 tbsp vegetable oil
1 red chilli, chopped
1 garlic clove, chopped
1⁄4 cup peanut butter
1 tbsp kecap manis
1/4 cup water
1 tbsp lime juice
Method
Take sirloin steaks out of the fridge and set aside for 10 minutes until they become room temperature.
Combine all peanut satay sauce ingredients into a small bowl and whisk until combined well.
Cook the broccolini in salted boiling water for 3 minutes until just tender. Place in a bowl with cabbage, shallot, mung beans and chilli and toss to combine. Set aside.
Season steaks with salt and pepper. Heat oil in a large non-stick frying pan over high heat. Add the steaks and cook for 4-5 minutes each side. Take off heat to rest for 5 minutes.
Slice the steak, add to the salad and toss gently to combine.
Divide the salad between plates, drizzle with kecap manis, top with mint and serve with the peanut satay sauce and peanuts.
