Asparagus with Oregano Butter


800g asparagus

50g butter

1/2 cup fresh oregano leaves

Salt and pepper


Cook the asparagus in a large pot of boiling water for 2–3 minutes until just tender. Drain and place on a large serving platter.

Place the butter in a small frying pan over medium heat. Once the butter has melted, add the oregan leaves and stir to combine.

Spoon the oregano butter over the asparagus and season with salt and pepper to serve.
