Ingredients

Coriander juice
  • 1 bunch of coriander
  • Juice from 1 lemon or lime
  • 1 tsp of honey
  • 1 cup of sparkling water
Coriander salsa
  • 2 handfuls of coriander
  • 1 tomato
  • 1 red onion
  • 2 cloves of garlic
  • Juice from 1 lemon or lime
  • 1 tbsp olive oil
Gluten free carrot tacos
  • 1 1/2 cups of carrot
  • 2 eggs
  • 1 tbsp cornmeal flour
  • 1/2 cup of cheese

Method

Coriander juice
  1. Blend together coriander, lemon/lime and honey, then add sparkling water to your liking. This drink is delicious believe me!
Coriander salsa
  1. Chunky chop everything and mix together ready to serve!
Gluten free carrot tacos
  1. Chunky chop carrots and cook in the microwave for 5 minutes in the microwave
  2. Drain through a muslin cloth to remove all moisture
  3. Mix above ingredients together and press flat on baking paper on a baking tray
  4. Bake at 200°C for 15 minutes
  5. Remove and enjoy filled with your favourite meat and salsa
