Ingredients

  • 1 onion
  • 25g butter
  • 1 potato
  • 1 cup milk
  • 1 cup chicken stock
  • 100ml cream
  • 2 handfuls of chopped watercress (large storks removed)
  • Pinch of nutmeg

Method

  1. Dice onion and fry in butter until lightly brown
  2. Add peeled and chopped potato, milk and chicken stock
  3. Boil for 20-30 minutes until potato is cooked
  4. Add watercress and nutmeg and mix through for 1 minute (don’t overcook)
  5. Blend with stick mixer
  6. Add and stir through cream
  7. Serve: garnish with a few watercress leaves
