  • 1/2 onion
  • 1 tbsp olive oil
  • 1 crushed garlic clove
  • 3 storks chopped celery
  • 1 tsp celery salt
  • 1 swede peeled and chopped into 2cm cubes
  • 1 tbsp honey
  • 1 cup vegetable stock
  • 1 cup roasted walnuts
  • 2 tsp thyme
  • 1 tbsp sour cream


  1. Fry onion and garlic in 1 tbsp oil until onion lightly browns (5mins)
  2. Add chopped celery, carrots and celery salt
  3. Add swede and honey and caramelise for 20 mins stirring continuously (you don’t want the swede to stick to the pot-add water if necessary)
  4. Meanwhile fry walnuts in a dry fry pan
  5. Add vegetable stock and boil for 10 minutes until swede it tender
  6. Blend the swede mix in a blender (I like to make a smooth base)
  7. Return to heat: add sour sour cream, thyme and roasted walnuts
  8. Cook until hot and ready to serve. Serve immediately
