Walnut and Swede Soup

Ingredients
- 1/2 onion
- 1 tbsp olive oil
- 1 crushed garlic clove
- 3 storks chopped celery
- 1 tsp celery salt
- 1 swede peeled and chopped into 2cm cubes
- 1 tbsp honey
- 1 cup vegetable stock
- 1 cup roasted walnuts
- 2 tsp thyme
- 1 tbsp sour cream
Method
- Fry onion and garlic in 1 tbsp oil until onion lightly browns (5mins)
- Add chopped celery, carrots and celery salt
- Add swede and honey and caramelise for 20 mins stirring continuously (you don’t want the swede to stick to the pot-add water if necessary)
- Meanwhile fry walnuts in a dry fry pan
- Add vegetable stock and boil for 10 minutes until swede it tender
- Blend the swede mix in a blender (I like to make a smooth base)
- Return to heat: add sour sour cream, thyme and roasted walnuts
- Cook until hot and ready to serve. Serve immediately
