Waldorf Salad

Ingredients
- 1/2 cup of toasted walnuts
- 2 stalks of cut celery
- 1 large packet of raisins
- 2 sweet apples cored and chopped
- A bunch of baby spinach leaves
- 150g of gorgonzola cheese (optional)
- Juice from 1 freshly squeezed lemon
- 2 tbsp sour cream
- 1 tbsp mayonnaise
- 2 tsp balsamic vinegar
Method
- Toast walnuts by frying in a dry fry pan for 2-3 minutes until lightly brown
- Chop vegetables and fruit, add to a salad bowl, and mix together
- Prepare dressing by whisking or shaking together: lemon juice, sour cream, vinegar and mayonnaise
- Add cheese, walnuts, raisins and dressing to the salad bowl and mix through
- Serve! This salad has a lot of flavour so it makes a great meal with a simple meat without many flavours
