  • 1/2 cup of toasted walnuts
  • 2 stalks of cut celery
  • 1 large packet of raisins
  • 2 sweet apples cored and chopped
  • A bunch of baby spinach leaves
  • 150g of gorgonzola cheese (optional)
  • Juice from 1 freshly squeezed lemon
  • 2 tbsp sour cream
  • 1 tbsp mayonnaise
  • 2 tsp balsamic vinegar


  1. Toast walnuts by frying in a dry fry pan for 2-3 minutes until lightly brown
  2. Chop vegetables and fruit, add to a salad bowl, and mix together
  3. Prepare dressing by whisking or shaking together: lemon juice, sour cream, vinegar and mayonnaise
  4. Add cheese, walnuts, raisins and dressing to the salad bowl and mix through
  5. Serve! This salad has a lot of flavour so it makes a great meal with a simple meat without many flavours
