  • 1 shredded carrot
  • 1 spring onion, finely chopped
  • A handful of mung beans
  • A handful of mint, chopped
  • A handful of coriander, chopped
  • 150g packet of thin rice noodles
  • A handful of roasted peanuts
  • 2 limes
  • 1 tsp of sweet chilli sauce
  • 1 tsp of brown sugar
  • 1 tbsp of sesame oil
  • 1 tsp of fish sauce


  1. Cook noodles according to packet instructions
  2. Prepare carrots, spring onion, mint, and coriander in a bowl
  3. Place brown sugar, lime juice, sweet chilli sauce, fish sauce and sesame oil in a container and shake to combine
  4. Pour the dressing over the salad and serve with roasted peanuts sprinkled on top
