Ingredients
- 1 shredded carrot
- 1 spring onion, finely chopped
- A handful of mung beans
- A handful of mint, chopped
- A handful of coriander, chopped
- 150g packet of thin rice noodles
- A handful of roasted peanuts
- 2 limes
- 1 tsp of sweet chilli sauce
- 1 tsp of brown sugar
- 1 tbsp of sesame oil
- 1 tsp of fish sauce
Method
- Cook noodles according to packet instructions
- Prepare carrots, spring onion, mint, and coriander in a bowl
- Place brown sugar, lime juice, sweet chilli sauce, fish sauce and sesame oil in a container and shake to combine
- Pour the dressing over the salad and serve with roasted peanuts sprinkled on top
