  • 425g of tinned tuna or 2 fresh tuna steaks or poached salmon steaks
  • 3 handfuls of spinach leaves
  • 2-3 boiled eggs
  • 100g sugar snap peas
  • Fresh parsley
  • A bunch of freshly steamed asparagus
  • 1-2 inches of diced cucumber
  • 1/8 tsp of freshly ground black pepper
  • 1/2 tsp of dijon mustard
  • 1/4 tsp of anchovy paste
  • Juice from half a lemon
  • 1 garlic clove
  • 1/4 cup of olive oil
  • 1 tbsp of white vinegar
Optional vegetable extras: Cos lettuce, avocado, red onion and yellow capsicum. Black olives are nice too, but I believe this salad is best without tomatoes!


  1. Prepare vegetables: steam asparagus, fry sugar snap peas in oil for 1-2 minutes, wash spinach leaves and chop cucumber, and boil eggs for 3 minutes
  2. Prepare tuna if using a steak: fry each side for 1-2 minutes each side (I like mine still red in the middle), then rest for 5 minutes and slice into pieces
  3. Make the dressing by shaking together all ingredients until a thick dressing forms
