Ingredients

  • 1 finely chopped red onion
  • 1 tbsp olive oil
  • 3 crushed garlic cloves
  • 1 tsp cumin and salt
  • 5 tomatoes chunky chopped
  • 1 tbsp sweet chilli sauce
  • 1 tbsp white vinegar
  • 1 tbsp white sugar
  • 2 tbsp tomato paste
  • 1 green capsicum

Method

  1. In a large fry pan or wok heat olive oil and fry red onion with garlic cloves, cumin and salt until lightly browned
  2. Add tomatoes and reduce over low heat for 15 mins until a thick sauce forms
  3. Add vinegar, sugar, tomato paste and sweet chilli sauce and cook for a further 5 mins. Add water as you need to so it doesn’t burn. Stir continuously
  4. Add finely chopped capsicum and cook for a further 5 minutes
  5. When capsicum is cooked how you like it,… The salsa is ready to eat!
Eat with: corn chips, in a burrito, toss through pasta and serve with parmesan cheese or serve cold as a pasta salad with fresh tomatoes added. Leave in a jar to be used later (there are loads of options)
