Ingredients
- 1 finely chopped red onion
- 1 tbsp olive oil
- 3 crushed garlic cloves
- 1 tsp cumin and salt
- 5 tomatoes chunky chopped
- 1 tbsp sweet chilli sauce
- 1 tbsp white vinegar
- 1 tbsp white sugar
- 2 tbsp tomato paste
- 1 green capsicum
Method
- In a large fry pan or wok heat olive oil and fry red onion with garlic cloves, cumin and salt until lightly browned
- Add tomatoes and reduce over low heat for 15 mins until a thick sauce forms
- Add vinegar, sugar, tomato paste and sweet chilli sauce and cook for a further 5 mins. Add water as you need to so it doesn’t burn. Stir continuously
- Add finely chopped capsicum and cook for a further 5 minutes
- When capsicum is cooked how you like it,… The salsa is ready to eat!
