Ingredients

  • 4 shredded carrots
  • 1 x 150g packet of thin rice noodles
  • Handful of roasted peanuts
Dressing
  • 2 limes
  • 1 tsp of sweet chilli sauce
  • 1 tsp of brown sugar
  • 1 tbsp of sesame oil
  • 1 tsp of fish sauce
 

Method

  1. Boil water and soak noodles
  2. Prepare carrots
  3. Dissolve brown sugar in lime juice over medium heat
  4. Add sweet chilli sauce, fish sauce and sesame oil
  5. Whisk until dressing emulsifies/turns creamy. Pour over the salad
  6. Serve with roasted peanuts sprinkled on top
