Tamarillo and White Chocolate Mousse

Ingredients
- 5 tamarillos
- 150g white chocolate
- 2 eggs
- 125ml cream
- 1 tbsp caster sugar
Method
- In a double boiler melt white chocolate and tamarillo centres together
- Leave to cool for 10 minutes then blend
- Meanwhile separate eggs into whites and yolks
- Whisk egg yolks through the melted chocolate and tamarillos from step 2
- Beat egg whites and add sugar, keep beating until stiff peak form
- Beat cream until tips form
- Fold cream and egg whites together until completely mixed, then fold in tamarillo mix
- Pour into glasses and refrigerate for 4-6 hours overnight until set
