Tamarillo and White Chocolate Mousse

  • 5 tamarillos
  • 150g white chocolate
  • 2 eggs
  • 125ml cream
  • 1 tbsp caster sugar


  1. In a double boiler melt white chocolate and tamarillo centres together
  2. Leave to cool for 10 minutes then blend
  3. Meanwhile separate eggs into whites and yolks
  4. Whisk egg yolks through the melted chocolate and tamarillos from step 2
  5. Beat egg whites and add sugar, keep beating until stiff peak form
  6. Beat cream until tips form
  7. Fold cream and egg whites together until completely mixed, then fold in tamarillo mix
  8. Pour into glasses and refrigerate for 4-6 hours overnight until set
