Sweetcorn Cauliflower Salad

Ingredients

  • 2 sweetcorn kernels (corn removed) (steamed for 5-10 minutes or raw)
  • 1/2 head of diced cauliflower (steamed for 5-10 minutes or raw)
  • A handful of mint
  • 1/2 cup of toasted coconut chips
  • Pomegranate seeds (from 1 pomegranate)
Dressing
  • 1/2 cup yoghurt
  • 1/2 tbsp tomato relish

Method

  1. Prepare cauliflower and sweetcorn
  2. Mix together dressing ingredients (it’s that simple)
  3. Toss dressing through salad and sprinkle toasted coconut on top
  4. Add a few extra mint leaves and pomegranate seeds on top to “lift it out of the bowl”
  5. Serve with fish, pork, chicken. If having it raw, I love it with BBQ lamb
