Sweetcorn Cauliflower Salad

Ingredients
- 2 sweetcorn kernels (corn removed) (steamed for 5-10 minutes or raw)
- 1/2 head of diced cauliflower (steamed for 5-10 minutes or raw)
- A handful of mint
- 1/2 cup of toasted coconut chips
- Pomegranate seeds (from 1 pomegranate)
- 1/2 cup yoghurt
- 1/2 tbsp tomato relish
Method
- Prepare cauliflower and sweetcorn
- Mix together dressing ingredients (it’s that simple)
- Toss dressing through salad and sprinkle toasted coconut on top
- Add a few extra mint leaves and pomegranate seeds on top to “lift it out of the bowl”
- Serve with fish, pork, chicken. If having it raw, I love it with BBQ lamb
