Sweetcorn and Bean Salsa

Ingredients
- 1 fresh sweetcorn
- 1 red capsicum
- 2 sprigs of spring onion
- 2 tomatoes
- 1 can of beans, “4 bean” combo
- A handful of fresh coriander
- 6 tbsp of olive oil
- 2 tbsp of red wine vinegar
- Juice from 1 lemon or lime
- 4 tsp of sugar
Method
- Slice and dice your vegetables into small pieces, sweetcorn kernel size. Raw sweetcorn is beautiful when eaten fresh
- Add dressing ingredients together and whisk with a fork or shake to form a creamy dressing
- Mix fresh vegetables, dressing and rinsed beans together and your salad is ready to serve
- Like all bean salads it is great served as a BBQ plate
