Super Salad

  • 1 green cos or butter lettuce, 1 red butter lettuce
  • 1/8 thinly sliced red cabbage
  • 1 sweetcorn, kernels removed
  • 1 courgette (and/or 1 cucumber), finely chopped into 0.5cm chunks
  • 1 can of drained chickpeas
  • Handful of roasted sesame seeds (fry in a dry fry pan for 5 mins, toss continuously)
  • 1-2 tbsp good olive oil for drizzle
Dressing: 2tbsp mayonnaise with 1 tsp curry powder mixed through


  1. Shred lettuce (slice width ways into 2 cm thick slices) and toss together in a bowl
  2. Add all vegetables and chickpeas above, toss together
  3. Scatter over half the roasted sesame seeds
  4. Dollop on top some mayonnaise dressing, drizzle over olive oil
  5. Scatter a few more seeds for serving
  6. Done,… delicious as part of a BBQ with any meat; chicken, lamb, beef, fish, ham, corned silverside, you name it
