Cheese cake, bottom layer
  • 1 x 250g tub of cream cheese
  • juice from half a lemon
  • 1 tbsp of sugar
  • 1 tsp vanilla extract
  • 1 punnet of finely sliced strawberries
  • half a 300ml bottle of whipped cream
  • 1 sachet of Jel-it-in (vegetarian gelatine)
Top layer
  • 1 punnet of strawberries
  • 1/4 cup of sugar
  • half a 300ml bottle of whipped cream
  • 1 tsp vanilla extract
  • 1 x 250g block of white chocolate
  • 1 sachet of Jel-it-in (vegetarian gelatine)


Bottom layer
  1. Dissolve 1 sachet of Jel-it-in in 1/4 of boiling water
  2. Warm cream cheese in the microwave for 30 seconds
  3. Mix together lemon juice, sugar, vanilla extract and strawberries
  4. Fold in whipped cream and dissolved Jel-it-in
  5. Spoon into the bottom of jars and leave in the fridge for 1 hour to set
Meanwhile prepare the top layer
  1. Beat egg white with sugar, until stiff
  2. In a double boiler or on very low heat on the stove top, melt chocolate
  3. Blend strawberries
  4. Fold everything together (egg whites, chocolate, strawberries, vanilla extract)
  5. Spoon into jars on top of the bottom layer
  6. Wipe the top of the jars and set for a further 2 hours in the fridge
