Strawberry Chicken Salad

  • 1 punnet of strawberries
  • 2 tbsp of balsamic vinegar
  • 3 chicken breasts or chicken thighs
  • 1 1/2 cucumber finely diced, 1 handful of mint
  • 2 finely diced courgettes
  • 2 tbsp of dried oregano
  • 1 tbsp of olive oil
  • 1 finely shredded cos lettuce, or 150g baby spinach
  • 200g buffalo mozzarella
  • 1/2 glass of chardonnay


  1. Cut strawberries into slices and soak in balsamic vinegar
  2. Cut chicken breasts into 2cm pieces and coat in dried herbs
  3. Heat olive oil and fry chicken on medium heat until lightly browned
  4. Remove from heat and set aside
  5. Add all lettuce ingredients and mint together then toss through the cucumber
  6. Tear mozzarella into chicken sized pieces and add to the salad
  7. Drain strawberries and set the vinegar aside, then add strawberries to the salad
  8. Prepare dressing by whisking together leftover balsamic, chardonnay and olive oil
  9. Add chicken to salad, then dress
