Ingredients

  • 1 swede
  • Half a celery
  • 25g of butter
  • 1 leek
  • 1 cup of chicken stock
  • 1 tsp Dijon mustard
  • Thyme or parsley for serving

Method

  1. Dice and fry leek and celery in butter
  2. Boil fried veg with 1 cup of chicken stock, 1-2 cups of water, salt to taste, swede and 3-4 sprigs of thyme
  3. Boil for 30-40 minutes until swede is soft
  4. Blend and serve with cream and fresh parsley
