Shaved Vegetable Salad

Ingredients

  • 2 carrots
  • 1 swede
  • 1/2 fennel bulb
  • 1 cucumber (seeded)
  • 2 lemons and black pepper
  • 1/2 diced red onion
  • 1 tin of mixed beans
  • Coriander and/or mint
  • 1 cup of red quinoa

Method

  1. Rinse quinoa. Add 2 cups of water and put onto boil for 15 mins (like rice)
  2. Meanwhile start shaving your vegetables: carrot, swede, cucumber and fennel. A food processor is ideal. However you can use a potato peeler or the large blade on a hand held grater
  3. When vegetables are prepared, squeeze over lemon juice and crack some black pepper on top. Leave in the fridge for 30 mins
  4. When quinoa is cooked, rinse in cool water with beans and mix with red onion
  5. Scatter shaved vegetables on top and your salad is nearly ready
  6. Top with your favourite herb(s) and squeeze lemon juice over top. Done!
