Sausage Stew

  • 6 sausages cut into quarters and cooked
  • 1/4 cup of oil (you can use less)
  • Garlic cloves from 1 garlic head
  • A tin of whole peeled tomatoes
  • 250g mushroom quartered
  • 2 onions cut into slices
  • 4 potatoes cut into bite-sized pieces
  • 1 tbsp of each, rosemary and thyme (dried or fresh)
  • 1 tbsp balsamic vinegar
  • 2 bay leaves
  • Salt and pepper to taste


  1. Preheat oven to 230c
  2. Prepare ingredients as above
  3. Add to a roasting or casserole dish and mix all ingredients coating everything
  4. Bake for 30 minutes then remove from the oven and stir ingredients
  5. Bake uncovered for further 30-45 minutes until potatoes are cooked through
  6. Mix several times during cooking to ensure potatoes are well browned.
