Roast Greek Salad

Ingredients
- 4 capsicums
- 1 onion
- 1/2 cucumber
- 1 tbsp olive oil
- 1 tsp oregano
- 1/2 cup pine nuts
- 100g feta cheese
Method
- Prepare capsicums by removing the tops and seeds from the centre
- Cut cucumber in half lengthways and scoop out the seeds
- Chop finely cucumber, feta cheese and onion
- Mix together olive oil, oregano, pine nuts, chopped cucumber, feta and onion
- Stuff capsicums then bake uncovered for 45 minutes turning after 20 minutes at 180°C
- Serve. Delicious on their own and great with chicken or steak
