Roast Greek Salad

Ingredients

  • 4 capsicums
  • 1 onion
  • 1/2 cucumber
  • 1 tbsp olive oil
  • 1 tsp oregano
  • 1/2 cup pine nuts
  • 100g feta cheese

Method

  1. Prepare capsicums by removing the tops and seeds from the centre
  2. Cut cucumber in half lengthways and scoop out the seeds
  3. Chop finely cucumber, feta cheese and onion
  4. Mix together olive oil, oregano, pine nuts, chopped cucumber, feta and onion
  5. Stuff capsicums then bake uncovered for 45 minutes turning after 20 minutes at 180°C
  6. Serve. Delicious on their own and great with chicken or steak
