Raw Swede Salad

Ingredients

  • 2 peeled carrots
  • 1/2 peeled swede
  • 1/4 bag shredded spinach
  • 3 sliced radishes
  • 1 red onion
  • Toasted walnuts
Dressing
  • Juice from 1 lemon
  • 1 tbsp runny honey
  • 2 tbsp olive oil
  • 2 tsp cider vinegar

Method

  1. Cut swede and carrots into julienne strips
  2. Slice radishes into thin strips
  3. Shred  spinach leaves
  4. Whisk or shake together dressing ingredients
  5. Toast walnuts in a dry non stick fry pan
  6. Toss all the prepared salad ingredients and dressing together and serve
