Raw Beetroot salad

Ingredients
- 1 roasted blended eggplant, slice in half, salt and oil, and roast for 20-30 mins until soft
- 1 grated beetroot
- 2 spiralized courgettes
- 2 kale leaves (shred into very fine pieces, coat in oil and soak for 15 mins)
- Feta cheese
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar, salt
Method
- Prepare vegetables
- Prepare dressing (taste and adjust to your tastes)
- Mix everything together
- Serve with feta sprinkled on top
- Delicious with pork or chicken
