Raw Beetroot salad

Ingredients

  • 1 roasted blended eggplant, slice in half, salt and oil, and roast for 20-30 mins until soft
  • 1 grated beetroot
  • 2 spiralized courgettes
  • 2 kale leaves (shred into very fine pieces, coat in oil and soak for 15 mins)
  • Feta cheese
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar, salt
 

Method

  • Prepare vegetables
  • Prepare dressing (taste and adjust to your tastes)
  • Mix everything together
  • Serve with feta sprinkled on top
  • Delicious with pork or chicken
