Quick Raw Cauliflower Salad

  • 1/2 head of cauliflower
  • 2 carrots
  • 1 onion
  • 2-3 tsp of cumin seeds
  • a handful of cashew nuts
  • fresh herbs, parsley, coriander or chives
Dressing your favourite pumpkin hummus
Or make your own
  • 3 Tbsp Tahini
  • 1 Tbsp balsamic vinegar


  1. Finely dice cauliflower into 0.5cm sized pieces
  2. Finely dice onion and grate carrot
  3. Toss everything together in a salad bowl
  4. Make dressing by mixing together tahini and balsamic vinegar
  5. Stir dressing through the salad
  6. Dry fry cumin seeds and cashew nuts
  7. Toss seeds and nuts over the salad and green herbs, done
  8. Serve with roasted chicken breast, or, pork loin steaks
