Quick Green Quiche

  • 2 chopped onions
  • 1 tbsp of cooking oil (I use olive oil)
  • 1 tsp of crushed garlic (or 1 garlic clove)
  • 1/2 cup of flour (I use gluten-free flour)
  • 1/2 tsp of baking powder
  • 3 eggs
  • 1 cup of milk
  • 1 packet spinach
  • 1/2 cup of tasty grated cheese (or a little crumbled blue cheese)


  1. Put spinach onto boil for 5-10 mins until soft. Drain and blend with 1 cup of milk
  2. Dice onions and fry in cooking oil, with flour and garlic for 2-5 mins until browned
  3. Press the onion mixture (from step 2) into a casserole dish
  4. Beat 3 eggs with spinach/milk mix (from step 1), stir through cheese, and pour over onions
  5. Bake for 30-40 mins at 200c until cooked through
  6. Done… You’ll be delighted how fluffy and light it is. Serve with your favourite vegetables and/or salad.
