Pumpkin Tiramisu

  • 1/4 pumpkin cooked and mashed into 1 cup of pumpkin puree
  • 1 cup of caster sugar
  • 1 pack of mascarpone cheese 200g
  • 200ml of cream, whipped
  • 1 tsp gelatine
  • 1 x 250g packet of ginger nuts (use gluten free variety if desired)
  • 100g of butter


  1. Process ginger nuts into crumbs in a food processor (or crush with a rolling pin)
  2. Melt butter and mixed into crushed biscuits
  3. Using your fingers, press biscuit base into the base of serving dishes
  4. Leave to set in the refrigerator for 1 hour
  5. Cook and prepare pumpkin
  6. Mix together mascarpone cheese, pumpkin and sugar
  7. Melt gelatine in 1 tbsp of boiling water and mix through the pumpkin mix
  8. Fold through whipped cream
  9. Remove set biscuit bases from the fridge and spoon pumpkin mixture on top
  10. Set in the refrigerator for 1 hour and serve with cinnamon sprinkled on top
