Ingredients
- 5 potatoes
- 1 packet of Maggi onion soup
- 2 cups of water
- 2 tbsp of cream cheese
- 5 slices of bacon
- Salt to taste
- A handful of chives
Method
- Peel and chop potatoes
- Put potatoes onto boil with 2 cups of water and Maggi soup mix
- Boil potatoes for approximately 30 mins until soft (add more water if required)
- Blend potatoes with a stick mixer or a food processor
- Dice bacon and fry in a grease-proof fry pan
- Mix cooked bacon, cream cheese and chives through soup
- Serve with a dollop of cream cheese and a few extra chives on top
