  • 4 large potatoes, peeled and chopped
  • 1 cup of chicken stock, 2 cups of boiling water
  • 1 leek
  • 3 bay leaves
  • 4 stalks of thyme
  • 50g butter
  • 200ml cream (use less if watching calories)
  • 2 rashers of oven grilled bacon for serving


  1. Boil potatoes with water and chicken stock, boil for 20-25 mins until soft
  2. Meanwhile, melt butter in a fry pan and fry leek, bay leaves and thyme for 2-5 mins until leek is lightly browned and soft
  3. Drain excess liquid from the potatoes leaving approx. 1 cup of liquid
  4. Add leek to the potatoes and blend into a smooth soup
  5. Stir through 200ml of cream and serve with bacon on top
