Pork Tenderloin Roast

  • 1 free-range pork tenderloin
  • 2 lemonade or granny smith apples, sliced into quarters
  • A handful of dried cranberries
  • 1 tbsp of olive oil
  • 1 tbsp of apple cider vinegar
  • 1 tbsp of raw sugar salt
  • 2-3 sprigs of thyme
  • 3 cloves of garlic


  1. Heat oven to 150c
  2. Prepare the rub by mixing and crushing all the ingredients together in a mortar and pestle, and rub over the pork.
  3. Heat a frypan and fry each side for 1 minute to “sear” in the coated oil
  4. Slice the apple and add to the frypan with the cranberries and the leftover rub
  5. Pop onto roast 20 minutes. After 10 minutes of roasting lightly coat (or spray) in oil to keep moist
  6. Remove from the oven and let sit for 5 minutes before serving. You can “tent” the frypan with tin foil to keep in moisture if you like
  7. Serve with the apples and drippings from the pan on top and with your favorite vegetables
