Pork and Cabbage Wrap

Ingredients
- 4 good-sized cabbage leaves
- 1 onion
- 1 tbsp cooking oil
- 350g of minced pork (or diced pork steak)
- 2 tsp of brown sugar
- Juice from 1 lemon
- 1 cucumber
- 2 apples (1 sweet apple and sour apple is best)
- 1 tbsp of sour cream
- 1 tbsp of cooking oil
- 1 tsp of chilli powder
- Chopped cashew nuts (Optional)
- 1 tsp of canola oil
- 2 tbsp apple cider vinegar
- 2 tbsp of plum jam, or other jam
- 2 tsp of mirin
- 1 1/2 tsp of soy sauce
Method
- Marinate park in brown sugar and lemon for 15 minutes
- Grate cucumber and apples and make the salad by mixing together cucumber, apples, cooked potato and sour cream
- Prepare the dressing by whisking or shaking all the ingredients together
- Heat oil in a frypan, fry chilli powder and onion until onion is browned then add pork. Fry until cooked.
- Assemble! In the cabbage leaf layer: apple salad, pork, dressing the cashews.
