Ingredients

  • 1 cup water
  • 1/2 cup sweet white wine
  • 1 tbsp brown sugar
  • 1/2 tsp vanilla essence
  • 1/2 cinnamon stick
  • 3 pears
  • 1 tsp arrowroot
  • 1 shot of rum

Method

  1. Peel pears, cut in half lengthways and remove the core and seeds
  2. To a pot add water, wine, brown sugar, vanilla essence, cinnamon
  3. Bring wine mixture to the boil
  4. Add pears flat surface down and poach in the boiling wine water for 20 minutes
  5. Remove pears and place into a dessert bowl
  6. Mix arrowroot into 1/2 cup cold water
  7. Mix arrowroot, rum and left over wine water together to get a thick sauce
  8. Pour over peaches and serve with vanilla ice cream, or brandy cream
