Persimmon Quinoa Salad with Salmon

Ingredients
- 2 salmon fillets
- 1 cup of Quinoa (uncooked)
- 1 peeled persimmon
- 1 cucumber
- 1 red onion
- Cream cheese for serving
- 1 tbsp of olive oil
- 1 tsp of hot sauce
- Juice from 1 lime
Method
- Prepare quinoa: in a pot bring to the boil 1 cup of quinoa in 2 cups of water, then simmer for 15-20 minutes until all liquid is absorbed
- Meanwhile prepare your vegetables and persimmon by finely dicing veggies
- Mix sauce ingredients together
- I use hot smoked salmon so no cooking is required. However if using fresh salmon, poach for 15-20 minutes until cooked, in 1-2cm of water. Alternatively grill fresh salmon for 25 minutes instead of poaching. It is delicious this way with a crispy skin
- Toss quinoa, veggies, persimmon and sauce ingredients together
- Serve with salmon to the side and a touch of cream cheese like in the picture
