Persimmon Quinoa Salad with Salmon

Ingredients

  • 2 salmon fillets
  • 1 cup of Quinoa (uncooked)
  • 1 peeled persimmon
  • 1 cucumber
  • 1 red onion
  • Cream cheese for serving
Sauce
  • 1 tbsp of olive oil
  • 1 tsp of hot sauce
  • Juice from 1 lime

Method

  1. Prepare quinoa: in a pot bring to the boil 1 cup of quinoa in 2 cups of water, then simmer for 15-20 minutes until all liquid is absorbed
  2. Meanwhile prepare your vegetables and persimmon by finely dicing veggies
  3. Mix sauce ingredients together
  4. I use hot smoked salmon so no cooking is required. However if using fresh salmon, poach for 15-20 minutes until cooked, in 1-2cm of water. Alternatively grill fresh salmon for 25 minutes instead of poaching. It is delicious this way with a crispy skin
  5. Toss quinoa, veggies, persimmon and sauce ingredients together
  6. Serve with salmon to the side and a touch of cream cheese like in the picture
