Persimmon Fish Salad


  • 1/2 cucumber
  • 1 peeled persimmon
  • 2 radishes
  • 1/2 avocado
  • Sliced almonds
  • 3 fish fillets
  • 1 tbsp sweet chilli sauce
  • 1 1/2 tsp fresh ground ginger
  • Juice from 1 lime
  • 2 tbsp plain unsweetened yoghurt


  1. Slice cucumber, persimmon, avocado and radishes into thin slices then layer on a plate
  2. Shake or whisk together sauce ingredients, taste as you go to get the sweet/sour and heat how you like it
  3. Pan fry fish fillets in a non stick fry pan serve to the side of the salad
  4. Fry almond slices in the fry pan with any remaining oil and fish juices
  5. Serve with sprinkled almonds on top
